
Coffee, it's not just for breakfast anymore. It also makes an outstanding main ingredient in dry rubs for grilling.
That's right. Coffee. For grilling.
If you've ever had a steak that's been rubbed with ground Joe, you know what I'm talking about. It adds a rich, deep, complex flavor to your seared meat that'll have you hooked the first time you taste it.
And to get you hooked, World Champion Pitmaster Chris Lilly gave me his recipe for pork chops rubbed with coffee, chili powder, and cayenne. It only takes 20 minutes from prep to plate... and is easy enough for even greenhorn grillers to master. So go grab yourself some nice thick chops, grind up some premium beans, and prepare for an eye-opening grilling experience.
Pork Chop with Coffee Dry Rub
Prep Time: 5 minutes
Cook Time: 15 minutes
Serves 8-10
You’ll Need:
4 teaspoons salt
4 teaspoons ground coffee
4 teaspoons chili powder
2 tablespoons dark brown sugar
1/2 teaspoon freshly ground pepper
1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4-1/2 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon turmeric
6 medium bone-in pork chops about 1-inch thick
Instructions:
1. In a small bowl, combine all the ingredients and stir until well blended. Preheat the grill.
2. Generously rub both sides of the pork chops with the coffee rub.
3. Grill the pork chops for about 5 to 7 minute on each side over a medium heat.
4. Let the chops rest covered with aluminum foil before serving. Discard any unused rub.
