A Simple Salmon with Salsa

She's coming over for dinner and you need to make something quick. Something decent, not reheated leftovers. No time for a lot of prep, no time for shopping for a lot of ingredients either. A good shortcut is to grab a jar of salsa and use that as a base.

Most salsas are just diced tomatoes, peppers, jalapeños, onions, some spices, and other ingredients depending on the type of salsa - ingredients you'd use to cook with anyway. And if you choose your brand well, you'll get all that without a lot of preservatives and other stuff you don't want.

Sauteed Salmon Fillet
2 - 8 oz salmon fillets
4 Tbs olive oil
6 Tbs Susan's Salsa - mild, medium or hot to taste (not drained)
Seafood seasoning to taste
Lemon wedges
Sprigs of fresh thyme

Rinse salmon and add seasoning. Heat oil in pan. Cook salmon over medium heat until golden brown (about 3-4 minutes). Turn over and cook until done. Move salmon to side of pan and add salsa. Saute until slightly caramelized. Slide salmon onto warm plate and spoon salsa around it. Garnish with spring of thyme and serve with lemon wedge.
