Here's a great recipe for when you fire up that grill this spring. It's from Semi-Homemade star Sandra Lee, and it features a margarita marinade. Tequila is not only good for getting parties underway, but it is fantastic for marinading and tenderizing meat. (I'm sure it's marinaded and tenderized you a few times.)
Try this for your next barbecue. It'll definitely get the season rolling.
Mexi-Marinated Steak
2 pounds flank or skirted steak
3/4 cup Jose Cuervo Golden Margarita
1/4 cup olive oil
1 tablespoon Montreal steak seasoning
1-2 teaspoons hot sauce
1/4 cup fresh cilantro or 1 teaspoon dried
1 gallon storage bag
Mix all ingredients into the storage bag and refrigerate for at least 12-hours.
Remove steak, shake off excess seasoning and grill for 5-7 minutes per side, test for doneness.
Serve as a main dish or with fried peppers and onions.
Accompany with flour tortillas and your favorite fajita sides
