
Your cousin's holiday party is winding down and you've been chatting up his wife's best friend. (One of the few side benefits of attending a bunch of these shindigs around this time of year is it increases the number of new women you meet.) You suggest coffee back at your place. Maybe some dessert. She agrees.

Irish Java Jolt
1 oz Irish whiskey
2 oz RK Express Coffee
10 oz hot water
1 tsp sugar
1 oz cream
Cinnamon
Add 10 oz of hot water to 2 oz of RK Express coffee. Mix in the whiskey and a level teaspoon of sugar. Pour the cream gently over a warmed spoon. Top with cinnamon.
Cappuccino Coffee Cake
1 premade sponge cake
1 oz of RK Express Coffee
1 cup of boiling water
1 cup of condensed milk
2 teaspoons of gelatin
Cocoa, for topping
Assorted fruit, for topping
Whipped cream, for topping, if desired
Line a suitably sized starsol cake tin with foil and place the premade sponge cake inside.
Add the boiling water to 1 oz. of RK Express Coffee. Mix for thirty seconds.
Dissolve the gelatin in the boiling coffee mix. Pour in the condensed milk.
Pour the mixture over the sponge cake evenly.
Place in your refrigerator for up to four hours, or until set.
Top with cocoa, fruit, and whipped cream (if desired).
